Have you ever stopped to notice how colorful veggies and fruit are. It just amazes me to look at that section in the super market, or our local farmers markets to see the array of color that nature is providing us to choose from. I am happy that natural selection is so colorful! It seems to be that the best way to eat is via picking a variety of colors on a daily basis, which gives us all the right portion of vitamins and minerals and phytonutrients for our body’s sustenance…so no problem here, I like that rationale and I would like to share a very colorful recipe too!
